I have Ultegra and it's great albeit an old version, 6770 Di2. The latest 105 is supposed to be excellent and only difference is a slight weight increase but shifting etc identical. So unless the cosmetics are a big thing for you I don't think you'll gain much other than a slightly lighter groupset and a significantly lighter wallet by opting for Ultegra over 105.

As for wheels, I've had both Hunt and DT Swiss and for me DT Swiss much better. DT Swiss are expensive though so maybe money saved on groupset goes on them. My bike though is rim brake so options for rim braked wheels reduced these days. No doubt yours is disc so probably endless options.

I would go for Di2 if it's in the budget, not needed of course but it is great to have.

Thanks. I have Di2 on my GRX Kinesis ATR. It's part of the reason for a new bike to get a new bike. I fully agree on Ultegra. I have a manual version on my Cervelo C3 - love it. I like aesthetics but they're not a game changer. However this bike doesn't have a budget - the funds are from the small compensation I got from the RTC. My wife has stage 4 cancer, my attitude is there's no point in leaving this unexpected cash in the bank. I need to enjoy life.

My regular cycling buddies are also advising DT Swiss, that or get Paul Hewitt to build something based around Hope hubs.

I know this might sound extravagant but if I've learned one thing this year is life truly is too short.

Thanks. Yes, this is the reason for considering GRX. I have it on my gravel bike and it is very good.

I'm unsure about 1x. It's a mental thing. It took me a long time to move away from a triple when compact arrived. I rarely used the small triple ring but it was like a security blanket. I probably only actually used it when touring.

I went with a double (105s) but soon after swapped it to a tripple.....I was much happier.
