Corned Beef sandwich followed by blueberries and blackberries with creme freiche.

mmmmm corned beef and pickle sandwiches. Long time since I've had that, I must put that right.

Last night actually......I had an Aldi meal of
Chicken burgers in a spicy hot crumb with skin on fries and veg......it was surprisingly tasty. I thought it might be dry but it wasnt.
I have one burger left which I put in the freezer

I've got two cans of corned beef in the fridge... I want to cook with them given that there 12-18 months out of date.

Any suggestions beyond Corned beef hash ?


Last night's effort (we're camping with kids) was wraps, Mrs B is planning on bashing up a risotto tonight.

That reminds me...

I've got two cans of corned beef in the fridge... I want to cook with them given that there 12-18 months out of date.

I do a lovely (imo) hash in the slow cooker.lightly brown mushrooms, onions and peppers.
Chop potato's, carrots and celery/leek into small pieces. Put them in the pot and add a can of chopped tomatoes and beef stock (i find chicken stock works fine).
Throw the mushrooms and onion in
Add whatever spices you like......I go for ginger, garlic,paprika plus salt n pepper.
I also add a good splash of Worcestershire sauce.
Stir and leave for 6 hours.
I then** add the cubed corned beef, stir and leave for another hour or 2.
**I leave it till then so it doesn't disintegrate.
