A 150gm pack of
extra large cooked king prawns yellow stickered down from £4.95 to £2.08 in Waitrose was the inspiration.
Gently fried a finely chopped red onion, 3 large cloves of garlic also finely chopped and a sliced red chilli in a mix of (very) old ghee and olive oil until soft, then added 16 baby tomatoes, skinned with boiling water, and half a teaspoon of Old Bay seasoning. Continued cooking until the tomatoes collapsed, then added the prawns, chopped in half to make them go further(!), while thinking what to do next. Remembered there was about 2/3 of a 300ml pot of double cream in the fridge, on the point of turning. Threw a teaspoonful of dried basil into the saucepan. Hmmm, still thinking. Stirred a couple of teaspoonfuls of cornflour into the cream to stop it splitting, a double squeeze of tomato puree, a smidgeon of harissa, a teaspoon of salt, a hefty dash of fish sauce and a small slug of anonymous white wine. Added to the pan and stirred until thickened, served with tagliatelle. Wouldn't have bothered writing this down, but I've been told not to forget what I did, 'cos it was absolutely delicious. Still wondering whether I've missed any thing out, as I have a habit of adding random ingredients as the mood takes me, but I think that's pretty much complete.
