You could try squeezing the cucumber in a clean kitchen towel. I just prefer leaving the juice in. You should also try the small Cypriot cucumbers if you can get them. They have a much better flavour.

BTW - I'm Cypriot and (amongst other things) a chef.

As long as it's gourmand and not 'gourd man', Vernon - it shouldn't put too many off their kebabs etc...not safe for most of your body...let alone work!
I like it with mint. And without. Cue cumbersome.

Nice to hear. Unfortunately it's rapidly becoming a bit of a basket case. If you do get a chance to go, head for the hills. There are some nice places around Kakopetria that are still unspoilt and chilled out.

I'll give you a shout the next time I'm making pastichia (almond macaroons). Can't think of much else that would survive the postal system - they had a go at me the last time I posted a kebab :headshake:

I e-mailed them yesterday and got a reply today stating that due to lack of demand they stopped stocking it in the UK and have no intention of reintroducing it.

I wonder if they would change their mind if they were were inundated with demands from others - if only I knew somewhere where 1000s of people gathered to pass the time of day and get involved in something, and where they'd gladly help someone else...
