I'll go with England then. I assume we're talking about where the crop to produce the mustard comes from, rather than where does the mustard the people of Dijon buy in the supermarket come from, or where does the finished product mustard sold as Dijon come from?

How do I know this I hear you ask. Well, as there is a little time before todays stage starts, a little story.

A few years ago, 2021/2022, I was having supper in Ay with a champagne producer and I asked why there was no Dijon mustard on the shelves of the local supermarkets, delis or convenience stores. (Except for a very few jars in the massive Leclerc outside Epernay. It is so massive, employees whiz around the store on rollerskates/blades, I kid you not). Mme Champagne Producer told me the Dijon makers used to obtain mustard seeds from Ukraine but supply was stopped, almost overnight. That interruption is ongoing. Saskatchewan, the flat prairie province in Canada 🇨🇦, stepped up and now sends approx 55,000,000,000,000 seeds to France.

And there I was naively thinking France grew its own mustard seeds to make Dijon mustard.

I now want to go to Epernay and see the roller-skating mega store employees. And relive the whole Champagne experience, where even the local screwed-down plastic chair pizza places serve it by the glass.

You've got to hand it to Carlton, when it comes to puns he's keen as ... ketchup.

I can't tell you how hard it was not to come up with a false etymology for "Cut the mustard" for him to explain on TV.... Only the fact that I watch Danish coverage, so wouldn't even know stopped me.
