I'm looking at getting some wheels built with one of these types of rim. Both list an internal width of 20mm -

My intention was to ride 25mm slicks day-to-day, but have the option to go up to 30 or 32mm gravel tyres for touring. But based on Sheldon's chart, the minimum tyre size for these rims would be around 30mm.
But Pacenti list both rims as ideal for road or CX use, and the majority of roadies ride 23mm or 25mm in my experience. And the Sheldon Brown site does say -
Note: This chart may err a bit on the side of caution. Many cyclists exceed the recommended widths with no problem.
So would I be ok teaming 20mm internal width rims with 25mm or 28mm tyres?
