My daughter just made veggie bolognese and it was very nice.
Main ingredients, instead of mince, were crushed walnuts, lentils and chopped onion.
I forgot to ask what the actual sauce was so might well have been a jar.

All my pasta dishes are veggie as I haven’t eaten meat since 1981.

Tinned toms and red wine should be sufficient to create the sauce. Sounds like could be a Joe Wicks recipe my wife makes sometimes. Has chopped mushrooms in too, they help with the texture.

For some reason she cannot stand mushroons, never has.

My wife is veggie so I am too by default. I regularly make a lentil bolognese. The trick is the base of mushroom blitzed to a really fine crumb. Saute it with finely diced onion/garlic/carrot/celery add tom puree and lentils and mix. Then add water and 1/2 pint of whole milk to cover and simmer until it has the consistency of bolognese.
