Just out of curiousity what problems have you had with the Quadlock poncho? I've found it works pretty well - there is a small amount of water ingress during really heavy rain but most phones now are IPX70 at least so a bit of water on the outside shouldn't cause any issues.

There is another alternative from a company called "sunslice" @Cathryn a good quality waterproof cover designed to fit over phone and mount.

The problem is that the touchscreen responds to the rain drops and causes chaos

I used to use a Garmin Oregon that had a touch screen. The good news was that it had a screen lock option to prevent rain from pressing random buttons. The bad news was that every time a rain drop fell on the screen, which could happen a lot, it beeped and flashed up a "screen is locked" message. Not good. Solution was a sandwich bag.

So it's mainly on our summer tours that I've struggled. If it rains, I put the poncho on but water still gets in and the phone gets very temperamental and often needs rice for days after. And the touch screen becomes really poor - so I'm navigating for a wet, grumpy husband and son in the rain with an unreliable phone and a touch screen that doesn't work properly. It becomes quite stressful.

For iphones there is a built-in function which will disable the touch screen (to prevent rain drops from registering as touches).
It's called "Guided Access" you will find it in Settings > Accessibility > Guided Access

If you just start the route again you can continue with navigation without losing any data (ive used this for different reasons)
Yes, I found this also with komoot on my phone, no need to panic, when the map is restored the navigation/route has continued in the background. Just avoid selecting Finish Ride or similar to get the app working again, be patient and when it comes back on all is well again.
I even rebooted my phone once and the current route was still in progress.
I used to take a Wahoo Elemnt Bolt unit as backup, but have stopped now.

@Gwylan those rubber phone holders are brilliant, damp out a lot of vibration. I use them on my mtb over very rough terrain & jumps without any problems. The downside of ziplock bags is that they don't fit around the phone/mount interface very well. The "sunslice" one I posted above has a rear central drawstring closure design, I've not found anything else similar.
OR you have to completely envelop the phone and then place it in the holder.

Interestingly, the Samsung website says my phone's rated at IP54, with a note about referring to the handbook for more details, but the handbook says nothing about IP anything, just warnings about keeping dust and water off the phone.

Any cheap throwaway food bag does the trick, though I simply use voice nabigations with my phone in a dry pocket.
Those 300 or 500 bags for a £1 ones are a correct phone size. And they are so thin, touch probably still works.
