My two favourites both come from when back I was vegan...

Crunchy peanut butter, banana slices and Szechuan chili paste (+ some coriander leaves, if you have them). Best on toasted wholemeal.

Hummus with spicey mango chutney (and / or pickled beetroot) and grated carrot (on wholegrain). For a non-vegan version, add some Wenslydale or Lancashire cheese.

Mini pizza and salad cream sarnies. OR pot noodle sarnies but can be a tad messy.
