Male is a default. "Cyclist", like many other roles, means a man in most people's minds. You have to qualify for women - "female cyclist". If you want to see how this works, consider how the default for "nurse" is female, such that one always seems to have to say "male nurse". It's actually just "nurse", in the same way as it is just "cyclist".

The default arises because of general observation of who comprise the majority sex performing a given role or activity.
More men cycle than women - default = male
Nurses are overwhelmingly women - default = female.

If the norm for a given role is predominantly one sex, then the minority comprising the other sex will really stand out and thus get prefixed with male/female. It applies equally to both sexes.
I work in a job which is staffed by over 95% men (it was 97% 30 years ago), so the handful of female staff doing the same job routinely get referred to by the prefix "woman" whenever one is mentioned. Male is the norm, female is the exception to the rule.
