Indian style lentil soup. Ive been looking at various lentil soup recipes but nothing particularly appealed so just did my own thing. A large mug of red lentils, 1 large onion chopped, 3 medium carrots chopped, a stick of celery chopped, 3 good sized garlic cloves chopped, table spoon of grated ginger, 3 large chillies, heaped tsp each of cumin, coriander, turmeric, garam masala a dash of black pepper, tsp of salt, fresh coriander chopped, 2 tomato's. Simmered the lentils in 4 mugs of water, fried the veg, added to lentils and whizzed it up. Result was a very nice, warming, flavourful soup ideal for these winter days. :okay:

That's close to what I do, except for the fresh coriander as it's not someting I like - most of my soups are a bit ad-libbed like this. Coconut (creamed or milk) is a good addition to this, as is some nigella seed.

Just happened over this.
I prefer a stick blender. We use it a lot. They generally last about 2 years.
Left over veg is a good start. It's known as "never again" soup.
Buy a decent stock powder, well I do and I'm legendary for my meanness.

Tend to batch cook things and freeze. We are only 2.
A favourite is a pile of various root vegetables roasted. Then frozen in about 300gm portions. One of these with herbs and spices of choice makes soup for 4.
