I do not envy you any of that, but best of luck. I hope what they are looking for is a blend of organisational and presentation skills. In that case, you could be on the right lines with explaining how a stage race works, and what is more many people who don't know would find it interesting. Just make sure you run it past a non-cyclist as a practice to get the bugs out of it. The biggest downfall is assuming basic knowledge in the first place and losing people to start with. Keep it simple and keep it clear. Are you using Powerpoint? If so, don't make it too whizzy. Put some jokes in and give it a definite beginning, middle and end. Say what you are going to do, do it and then say what you have done. (Ex-teacher here, by the way.) Best of luck again.

Don't even think of using Prezi. A well designed straight forward PowerPoint presentation will support the information that you want to convey. A Prezi presentation is eye candy and swamps the presentation with a plethora of special effects leaving the audience guessing what the next effect will be rather than following the development of the information being presented.

What job do you do? Who is listening to the presentation?

I think I'd be tempted to do something that can have "next steps" and some analysis. You should move away from simply describing something you enjoy.

Try and relate it to your job perhaps? Team ethics/what makes a stong team? Competition? Planning? Then use the Tour as an example or as a way to show these thngs.

Only if you use the graphics as the main body of your presentation and overload it with special effects. It should be used to underline and highlight key points that you actually talk about. Too many people use Powerpoint in the way you have described Prezi, or even worse, repeat verbatim what is shown on screen. Having said that, you are also correct in that Prezi if used in the same way as Powerpoint by most presenters becomes "death by......(insert your presentation media choice here)". Most if not all of our avid readers at some point have had to sit through a Powerpoint presentation. How many have seen a good Prezi one?
 
The last interview I went to had a "presentation" - I gave the panel a sheet of paper each and said "take notes and listen"...I got the job.

The best presentations are delivered with confidence and do some of the following: inform, persuade, entertain, meet the needs of the target audience - what are they expecting? how many people are on the panel? who are they?

Look at the things that you are most knowledgeable about and select from that body of knowledge - are you sure that 'anything' excludes all things health related? I'm sure that there's some fascinating health related things that can shared with your audience. I'm not sure that the dissection of a grand tour with grab everyone. Didn't you do LEJOG? Wouldn't the planning, preparation and implementation of the plans along with how you coped/changed because of it and how the average cyclist can see it as an achievable target?

So a 15 minute rant on the iniquities of modern management, complete with expletives, is definitely out then?

My last but one employer, I'm now retired, did this and promptly gave anyone on the highest pay grade (Performance determined.) anything but the job and shift they wanted. A 'Good' way of getting the highest paid, and most competent, employees to leave, as did I for more money and the shifts I wanted to work.

Do it about something you're interested in and passionate about - your enthusiasm will show. Maybe try to involve some audience participation/questions - though not embarrassing stuff. E.g at the start ask them to write down what the coloured jerseys in the Tour mean... Then at the at end ask them a similar question to see if they've learnt anything.
Don't put lots of stuff on your presentation slides - people will read them instead of listening to you. And don't say "I'll just put this slide up and let you read it for yourself".
