You have set me off down a rabbit hole.
Historically the term come from the overlapped style. In the last generation or so it has started to be used more widely, especially by sellers of domestic sheds, and now encompasses a style that is a hybrid of V-groove and shadow gap. The actual term shiplap predates what is now seen as shiplap by many people.
Etymologically speaking, it is a good example of the evolution of language as influences from elsewhere in the world entered the local parlance, often displacing perfectly serviceable words and terms.
