Oh, the recipe?
1 large Chicken
1 Large Le-Crueset
12 bulbs Garlic
250 mls Red wine vinegar
3 Handfulls of fresh Thyme
Break-up the garlic bulbs into cloves, but don't peel.
Place 10 bulbs worth in bottom of Le-Crueset.
Place 2 bulbs worth inside chicken cavity with 3 handfulls of fresh thyme.
Smear Chicken with Olive oil, salt and pepper and place on Garlic.
Add Red Wine vinegar.
Place lid on pot, into the oven at 180 for 60-75 mins lid on, the 30 to 40 mins lid off.
Add a small amout of water if drying out.
Serve with good Tagliatelle and green sald with Balsamic.
Delicious.
Left over Garlic can be uused on toast the next day.
Sleep alone.
