Hopefully this will work.

I'm looking into upgrading my current Campagnolo Record 9speed drivetrain (with Fulcrum RRS crankset and 10spd rear mech) to 11speed.

By my reconing all I actually need to buy in order for it all to work correctly is a sett of 11speed Ergo levers and an 11speed cassette.

I am guessing/hoping that the current 10speed (Record) rear mech will work fine with the 11speed set-up - any comments/experience?

No - the 11s cable pull and parallelogram geometry are different to the 9s and 10s for which the rear derailleur is interchangeable as you know from your current setup.
You'll need 11s Ergos, rear derailleur, cassette, chain. Presumably the front derailleur will operate reasonably well.
