adjusting gears

hi all
how do you adjust shimano gears as i cant get them all and sometimes they jump
i am faced with 2 screws but which one does what

I attempted to mess with the gears on my bike. I could see that the cable for the front mech was way to loose.
After about 30 minutes I though I had it sorted so went for a test ride.
The test ride ended at the LBS with a full service ordered on my bike.
There's things I like to leave to the professionals; gas, electric, plumbing and now shimano gears!!!

It is just practice like anything else , start with simple stuff and work up to more complex bits .I just stuck a new rear mech on my commutter and i am in the process of sticking a new cassette on the weekender when it comes.
