Only slightly off-topic, can I ask a cooking question, please?

The TV cooks always cook a piece of meat and then say "now leave it 5 minutes to rest", then they carve it and decant the slices onto a big serving platter, then garnish it with vegetables or whatever, and then serve it up. Isn't the meat cold by then? Am I a bit weird in wanting my dinner to be hot, and not half way to congealed?

I've half-watched about an hour of the series - it's a bizarre idea for a TV programme....
It's not the sort of food I would eat - indeed, I find something faintly immoral in investing so much time and effort to produce something so esoteric - but it's always fascinating to see people demonstrating outstanding skill, whatever the task.
