I was once told that the practice of squeezing lemon onto fish was originally to neutralise the strong-smelling amines/ammonia that can be produced by the fish if not perfectly fresh, although it has become a taste preference now.Actually, no sauce at all, just a squeeze of lemon.
I'll confess despite being a dirty northerner living down south, I do like (particularly home made, which our local chippy does) tartare sauce on F&C.You say that like it's a bad thing
