1. The bacon must be well done - none of that 'still pink and flabby' stuff.

2. Plate really hot.

3. Bread pre-warmed.

4. Tomato sauce in a dollop on the plate.

It has to be smoked bacon, done crispy, in granary bread and with a smothering of caramelised onion relish or mango chutney. YUM.

Smoked bacon? No. I've never seen the point of smoked bacon. I regard it with the same mixture of amazement and contempt that I have for minted peas.

Depends how i'm feeling. Sometime red, sometime brown.
Mainly brown sauce though.

i had to add both, as that's what i do in the canteen at work. otherwise brown sauce and mustard is nice.
