Depends...do you like rolling countryside or mountains, hot or cold weather. Many different environments in France to choose from. Personally I would live in Provence, with easy access to nice flat areas plus the ventoux and alps within easy reach, plus the south coast for beaches.

Aveyron (Dept 12) Tarn or Tarn & Garonne (Depts 81 & 82).

Lovely roads, lovely hills, lovely rivers, few people.

Off the beated track. Good food, good wine.

Some summer storms, but mostly hot, dry and hilly.
