My situation seems opposite to yours.... The fitters say higher than heel to pedal
Sorry I mis-read (been a long day) :blush: I'd go with the lower of the two fits then and if its comfortable, problem solved. Good Luck :okay:

If I do this at my bike fit height my heel is at least an inch above the pedal even with my leg locked out

The only scenario I can think of is you having very big feet with the cleats as far forward as they go.

If you normally pedal with your toes down, then the saddle would be a little higher than otherwise.
If your legs are not straightening completely at the bottom of a pedal stroke then you're probably okay.
Can you find an experienced rider to ride with you and observe?
