Boost Hubs....can I mount normal wheels?

Try Hope for a custom set, as they will probably use a MTB hub coupled with the rim of your choice. They also have carbon, but that will go to 4 figures.

The advantage here is rims/hubs are fully supported, and hubs in particular they guarantee spares support. If spending big coin that's where I would go.

Id get some lightbicycle rims and lace them to Hope Pro4 boost hubs if it were me LightBicycle will build them for you too of course if you'd rather go that route.
