Speaking as a middle class nobber, the correct middle class nobber name for the leaf is mâche. Pie and mâche is a favourite Shoreditch luncheon, often served with a liquor such as Châteauneuf Du Pape. It might be preceded by a persillade d'anguilles à la gélée.
