I'm sure you write with tongue in cheek but hydrogenated vegetable fat is one of the world's big cheap commodities, sold in shiploads along with carbohydrate, sugar and water, all of which are the major ingredients in industrial food and drink, over-consumption of which is responsible for the fat epidemic.
Unfortunately fat and dairy produce in general have been the wrong culprit since the early 80s ....

It may surprise you, but a big percentage of cows are no longer grass fed in many places. In the USA for instance, most are now corn-fed. This has a huge impact on the Vit K2 content of their milk and meat.

Vit K2 is an essential part of the calcium cycle. Most people now have some degree of K2 deficiency which can lead to osteoporosis, and poor teeth. The bones and teeth suffer from reduced calcium intake while the calcium ends up where it shouldn't, such as in arteries and heart valves, leading to heart attacks or strokes.

So, the point about grass-fed farm animals is a very important one!

Ancel Keyes has a lot to answer for. Seems it took his passing for criticism of his bad science to get noticed and more than 10 years later we're still struggling with the bad messaging of the last 50 years.

Since reading that book you recommended I'm on 200mcg K2 a day.
 
There's a contradiction if ever there was one.

What I mean is they're interchangeable to me - which I use, that they taste like. Only slight difference is spreadability.

Grass fed cattle also have higher levels of CLA (Conjugated Linoleic Acid) in their milk fat which is also thought to be useful in weight control

IIRC it can be traced back to a flawed study conducted in Japan in the 1950s...
I think you're correct, but in terms of the major change in the western diet away from fat/dairy and to high carb/low fat and the correlation with the sudden rise in Obesity, the graph kicks-skywards from the early to mid 80s.
