Plus I would have to make changes to the from mech as I thing its 3 chain rings on the frontTouring bikes usually have a stronger heavier frame to cope with the extra loads.
Better to do up a racing bike if that's what you want to end up with.

Here’s a Dawes tourer that’s been stripped of all it accessories. The problem you’ll have is a tourer has slacker head angles and a longer wheelbase to give it stability when loaded so it won’t have the sharp feel of a racer.
