I always thought the colour was mainly to indicate the wear on the cleat. When the red / yellow is no more it was time to buy new cleats. Apologies if I am wrong on that.
It is, but also denotes the degrees of float the cleat will offer. Yellow 6 degrees being the highest and most common

The coloured bits don't really indicate wear they just protect the bits that do wear from touching the ground , you could pull the coloured bits off on day one as long as you never walk in the cleats it would not matter .
