I rode 700 yards to Battersea Park the very first time that I clipped in to SPDs...…..and fell over while attempting to come to a gentle stop.. The bike was firmly attached to both feet as I lay giggling sideways on the tarmac. I never felt the need to increase the release torque above the absolute minimum after that introduction.

Road/MTB minimum, trike maximum as I don't want my ankle rearranged if my foot comes out of the cleat

Always lowest or 1-2 notches up from for me. Nice and easy to un-clip for those unforeseen moments and I've never ever had an issue with inadvertently unclipping (SPD or SPD-SL) - and I've been known to put a reasonable amount of ooomph into my cycling at times (ex-front row rugby sized thighs ^_^)
