I can't quite decide how to finish off my salmon tomorrow (possibly have enough for two meals, so there might be two winners!). The challenge is to suggest a nice, quick(ish) meal for my dinner tomorrow :biggrin:

Okay, so here are your ingredients:

fresh salmon

Then I have:

Potatos, carrots, leeks, toms.

Store cupboard items:

different herbs and spicies
tinned tomatos
soya / fish sauce
Rice/noodles/pasta (penne or spagetti).

(possibly have some other useful ingredients floating around in the fridge and things!)

Best suggestion wins 10 points...which aren't really redeemable anywhere).

I have already had: fish pie and salmon with fried leeks and roasted potatoes and carrots.

I've already spent double my usualy supermarket spend this week (hopefully it will last a few extra weeks though!!).

I do kind of fancy curry, but not indian. I have thai pastes...but no coconut milk. I do have freshly made stock, so that might come in handy? Also have flour!

I had fish cakes at the begining of the week...so they're also a no no :biggrin:

Thomatoes and salmon - no

If the Salmon's reasonable keep it simple. It will go with the pasta and some creme and pepper.

Save the tomatoes / leeks / carrots / soya etc for other meals

Have you not seen the first round of Masterchef goes Large - they throw everything into one pot :biggrin:

Be simple my friend - pasta and salmon with a twist of pepper and a sniffter of cream

Think you miss understood. It was just a list of everything I have which could be used...rather than a list of stuff that had to be used :biggrin:. Certainly, I wouldn't want everything I suggested...pasta, rice and noodles all together would be weird ;)

Pasta sounds nice...haven't got cream though!

I'm thinking something with the noodles. Something light and fresh.

Like noodles, with the salmon mixed with some grated carrot, chillis and ginger, with a lime/fish sauce dressing and crushed peanuts.

Could be up for a pasta dish too though, anything without cream?
 
Steam the salmon in foil in the oven.

Boil the vegetables (potatos and carrots); fry the leek.

Mash the potatos and carrots, adding the thinly sliced leak afterwards, and add choice of herbs to taste.

Have the tomatoes, uncooked.

Then dig deep in your fridge to find the ice-cream for afters! :wahhey:

Baste the salmon with some honey and grain mustard finely shred the leeks,rub some olive oil on some tin foil seal the salmon and leeks in side the foil and bake for about 5-10 mins depending on oven( add a little white wine if you want qptional)

Don't ruin the taste of the salmon. It is getting trendy to pan-fry salmon, or put a chilli sauce on it. DON'T. It's like spreading chocolate on cheese.

Either poach the salmon for 10 minutes, or put in the oven wrapped loosely in foil for 5, say (check when finished that it has gone from dark to light pink - depends on the size of the fillet)

Chop the carrots into sticks, then into short sticks. Fry with the sliced leeks in butter for 5 minutes until nicely coloured on the outside.

Meanwhile, cook the noodles for 4 minutes.

Add the carrots and leaks to the noddles, and a little dash of the soy sauce. Recommend some gentle herbing, such as oregano or coriander (leaf), and a good twist of freshly ground pepper.

Mix well, making sure that the noddles are covered in the soy sauce. Check the taste.

Put in a bowl, and add the poached/ovened salmon.

Quick, simple, and very tasty.

Pan fried is good! Had that yesterday.

Sounds good. Might do that with the left over salmon from tonight as it's quite similar to yesterday.

Think I'm going to go for a thai noodle salad type dish, as I quite fancy some noodles tonight xx(

Salmon, olive oil (1-2 tbs), herbs, pepper, wrap in foil with headroom. 5-7 mins at 180 in oven.

Mashed potato, remove from boil just before done, mash, put in frying pan and cook (a la bubble and squeak) chuck in small amount of cooked veg in last minute or so. Serve salmon on bed of bubble and squeak, with any spare veg. on the side.

Sounds good to me. :smile:
