on a touring bike, like the galaxy, with dropped bars on long day rides or touring where you aren't flying along at 20 or 25mph where do you hold? on the drops, on the hoods or on the flat top section or where?

All of the above. Thats the beauty of having drops on a touring bike, you have multiple places to place your hands.

i think i would break my back riding on the drops for any length of time!
(worse back then most people my age due to heavy lifting and the odd other back killing thing eg:bit of black smithing, lifting of light vehicles, why oh why?! etc)

Drops on a touring bike arent usually set as low as on a road bike. Sometimes after an hour or two riding on the tops a short spell riding the drops can feel like having a stretch. Its just nice to have the option.
