The Danish cycling website say you need to take a train across this - It also says you need to book onto train in advance

Anybody know if the latter is true - or can you just turn up at Nyborg station and get on the next train?

Can't offer an answer, but this may be of help:

As long as you avoid peak commuter times you can just turn up and get on the train, we did it without booking. The trains run every half hour, so if there was a problem with too many bikes then you could easily catch the next one. The journey from Kørsor to Nyborg is only 12 minutes and the current cost I think is 80kr plus 12Kr for a bike ticket.

You can get train times from the DSB route planner site. If you are traveling any distance in Denmark by train then I would certainly recommend booking in advance.
