I cable lock mine through the rails. It's not a particularly expensive saddle, but add in a carbon seat post then it's about £80 plus for the two. Just have to prey no tea leaf recognises the Ritchey WCS bars which are £80 a set.
Nicking a saddle with a quick release is one thing, but nicking a set of bars would require a very dedicated thief.
It reminds me of the guy who had his Rohloff hub stolen when the theif cut all his spokes.

I used to take the seatpost and saddle with me - only works if the bike is under cover, or if it's a bike you borrowed off your brother and you tip the rainwater out before you give it back ...

Don't use QR seat post clamps.
Ballbearings in the hex heads superglued in place - how often do you change saddle height or angle (and you can dissolve it with nail polish remover.)
Kryptoflex cables.
et cetera.
 
I view it that just about everything on a bike can be removed in a couple of seconds so no point sweating about one component or another.

Best to just not leave a decent bike anywhere not secure.
If you have to, then just use a tatty old bike that no one will want anything from.

I have to put the saddle down to fit my bike in the boot - QR is very useful for this :sad:
 
My saddle is one of those with a hole (for your bits I think!!) in the middle which is useful for passing a chain through to lock it.
