The scientific reason for not doing that is:

Staling is not a drying out process it is a starch crystallization process, the rate of crystallization is maximized at around 4C ie fridge temperature. best to freeze or keep at room temperature. we keep our sliced bread in the freezer
Modern bread goes mouldy before it goes stale.
