Whilst yesterday was a bit over the top. I do eat a lot however my wahoo computer/heart rate monitor said I used 4074 calories on Fridays ride.

That would be low even for a reasonably sedentary female!
Good grief. That's around 2400 calories without anything spread on the toast or crackers!! My daily target is 1200. Is this usual for you? Hardly a useful calories in that list. I feel a whole lot better about my failure to resist a G&T and packet of crisps yesterday evening.
So today I have eaten.
3 slices of toast, one with butter, one with butter and peanut butter,one with marmite and butter.
10 ryevite crackers with butter 2 of which had cream cheese with garlic and herbs.
2 spoonfuls of peanut butter.
Crisps
A pizza with cheese and olives
2 magnum ice lollies
Red wine.
and it’s still only early doors.
1500 calories is a diet for an adult male. Peanut butter is a great source of protein so useful calories.
For an adult male who's doing nothing but laying in bed all day.1500 calories is a diet for an adult male.

You ride a lot so this really isn't a huge amount for someone regularly burning 000's of calories in single ride. I am the same, a typical ride day (around 4hrs) would see me eat a similar amount. I did some rough calculations a while back and reckon I burn something in the region of 25-30,000 calories a month which is equivalent to 12-15 days of food at the recommended 2000 calories a day for a man. If you are doing regular steady state endurance exercise then you have to replenish your energy otherwise you would crumble fairly quickly!
