The best film soundtracks do their job almost without you noticing. I really don't like more recent trend in Hollywood soundtracks that just seem to aim at loudness and a lack of subtlety (e.g.: Lord of Rings) or 'meaningful' pomposity (e.g.: Mystic River).

Crimson Tide. Just brilliant. Pirates of the C reminded me of it alot, though it was much more 'lighthearted'.

Sneakers.

The Qatsi triliogy (Philip Glass). Powaqqatsi, if I had to choose one of them, if only for "Anthem - Part 2", which I adore (and walked down the aisle to).

Apollo 13 is quite good to listen to, because you get orchestral bits and then contemporary popular tracks.

The Fisher King is great for a random selection of music!

Hmmm, going to have to go home and browse the not-insubstantial soundracks collection to try and decide on just one favourite...

I like many of the above suggestions - the only recent soundtrack I've really thought had something was Jonny Greenwood's work on There Will Be Blood. Surprisingly excellent.
