Giant Defy or Specialized Allez

Probably a stupid question but is Tiagra a massive step up from Sora. I know you got 20 years rather than 18, but is it like chalk and cheese?

Sora 2013 is effectively Tiagra now with double lever shifters.
Tiagra will be a little lighter and theoretically smoother, but not chalk and cheese. More like fizzy wine v cheap champagne.

I have 2 road bikes.one with 2012 Sora and the other has 105. The gearset doesn't determine which bike i ride.

There's no going back now! I've just ordered the Defy 3 in Black. I can't wait to get it and go for a ride.
