I'm currently in the process of making a little video of myself in each position on the bars on both bikes. Hopefully I can get some helpful advice from here as to where I am going wrong.

Your saddle heights are quite different on both. Get the tape measure out. The Muddy Fox looks too low.
^^^ This. It looks between half and 1 inch too low to my eye.

The Muddy Fox does look like it is a longer reach Matthew. It's probably that you feel it more now that you are getting used to the Specialized.

Some people on YT have advised that the problem might be the stem, so I will find out what size the current one is and buy a new one accordingly (probably end up with the same one on the Spesh).

Yes, I thought that too. I ride the Spesh pretty much everyday and only ride the Fox twice a week at the most.
That would definitely do it. Having another look at the video it also looks as though the Muddy Fox has a longer stem than the Specialised. Changing it to a shorter one could make the difference you're looking for.

Altering the saddle height between the two is not good they should be the same. Alter the reach with a new stem. The saddles should be the exact same height. This is also a likely cause with your foot problems etc.

Get the tape measure out on each bike and write them down.

You will also need to measure top tube lengths as well as stem. My two road bikes have a 3cm longer reach than my fixed, but that was deliberate. Saddle heights are exactly the same.

Okay, I have done some measurements tonight. I measured my Spesh stem at 110mm, and the Muddy stem at 130mm. The measurements are probably wrong but the difference is correct.

Length from top tube to seat post:
Spesh - 500mm
Muddy - 570mm

Seat height:
Spesh - 200mm
Muddy - 270mm

Handlebar width:
Same for both.

Brake lever reach (from top of hood to where the bar it flat):
Spesh - 130mm
Muddy - 160mm

There are some quite big differences and I think that the first step is to get a new stem.
