I worked my way up to Encona, which I think is the hottest generally available chilli sauce. Tabasco etc. I can just drink now. Thing is Encona is very salty so I try to use fresh chillis as much as possible since you get more heat and flavour I think. Tesco in Rochdale do bags of scotch bonnets, which will do the job, and the Asian cash and carries often have habaneros and sometimes nagas. I've used Dave's Insanity Sauce when Asda stocked it, but I've decided that extract base sauces are just cheating really, although they do go a long way. I was given a bottle by a work colleauge the other day as he recently had a heart attack and doesn't want to risk it! so I'll keep that at work for spicing up my ready meals there.
What I'd really like is a source of reasonably priced New Mexico type green chillis so I can make proper NM style rellenos and enchiladas and green chilli cheese burgers. My Dad sends over the red chilli powder, but I miss the green.

Stayed in a hotel in Scotland all last week, it's owned by an Indian guy and the menu has a 'British' section and an Indian section - went for the curry every night...rude not to. The last night there he must've thought I'll give those bastards something to remember me by because the food was bloody hot, the green chilli naan had a years crop slapped on it - the experience was like eating razor blades.

Back to normality now except we'd already booked an Indian meal for tonight!

Oh well...
