For ordinary day to day vegetable preparation no, I wouldn’t wear protective gloves, however, if I was going for a Strava “Queen of the chopping board” record I would be down at the Cook shop perusing their lines of carbon fibre reinforced Kevlar gloves pronto.

Why not go for the butchers spec 'chain mail' gloves, bloke down the pub worked in a slaughterhouse and he used to bring his in when he stopped for a quick pint after work

They may be a trifle over-engineered for Strava QOTCB attempts, if say, they weigh an extra 0.5kg, that could slow my arm movement down by up to 0.06 ms per stroke, in a field where marginal gains can make the difference between winner and also-ran.
