The object of chess is to checkmate (capture) the king. Castling (swapping King and Castle / Rook) usually puts the king in a better defensive position with pawns protecting in front, castle protecting kings flank, and Queen and Castle aligned protecting each other, with Bishop joining in as well if not taken.

Yes, I can understand the reason for it now. For a beginner, it might be a step too far, when they are trying to remember all the moves. Or does it make the game more interesting/challenging?

Suggest you undertake those moves for her while explaining how each piece moves, while not doing it for yourself with the consequence her subsequent moves you probably do for her result in you being checkmated.
