I believe vinegar is made from grapes, barley, or apples. Commonly use grape or apple cider vinegar, which is clear. Whatever gets the job done, IMHO, is best.

Malt vinegar is made from barley malt, in a two-step process of fermentation.
Cider vinegar is a two fold fermentation of apples.
Wine vinegar is from grapes.
Distilled vinegar is made by acetic fermentation of dilute distilled alcohol.
