they do tend to do that when you are honking it. If you squeeze the brakes on just before / as you tighten the answers, then that helps to align them.
good cable disks are good, cheap ones tend to be terrible and hard to set up, and despite the fugly hoods which aren't great for small hands, hydro discs are significantly better.
i still prefer rim brakes on my best road bike though. Ultimately your stopping power is limited by rubber on tarmac, so taking bad weather out of the equation, I prefer the simplicity and silence of good rim brakes.
