Whether bar end or integrated brake/gear levers, you'll need the stops and therefore the little square bits on the frame.

That's a smart frame. You're doing the best thing - learning about bikes by building them up. Fun and satisfying. When I was doing it, we didn't have t'internet, and the workshop was full of bits - washing-up bowls with assorted oddments in them. If you needed a specific bolt, you poured it all out on the floor and did a fingertip search.
