If the road bike has metal stays, there's no reason why you couldn't p clip on a rack and take panniers
Carbon becomes a bit more complex but you can attach racks to non carbon seat posts or seatpost collars
Full carbon I'm afraid

Fit an alloy seat post and you should be able to carry 7kg with the pannier racks, or 10kg with the SQR fitting.

If you're going in the summer months then it's perfectly doable with a few on board bike bags.

Essentially, going with a t-shirt, shorts and flip flops. Wash kit in the hotel each night.

I'm considering doing something similar next year on my road bike.

There you go then, my 2 panniers for two weeks touring in Spain or France weigh in at 5 to 5.5kg, including the panniers.

Did you get your saddle comfort issues sorted then? If not, I'm not sure I'd go multi day touring

Yes.........my poor little botty is so much better now..........thank you.
I did post re' my success and I think the link below is the one.
I am now doing regular 30+ milers with very little discomfort e.g. I did a 28 last Sunday followed by a 27 on Tuesday..........would have been impossible last year.

Yes..........thought of that after reading the suggestion. I assume the carbon frame/stays will not have a problem as I only weigh 70 Kg.
