Sugar peas are eaten pods and all. Quite nice uncooked when young.

I only peel carrots if they are a bit slimy when kept more than a few days( supermarket ones of course).
Swedes need peeled and beetroot skins come off after cooking.
Nothing else gets peeled but always washed except for mushrooms.
Obviously common sense applies and melons have a hard skin for example.
I skin rabbits when I get them but they are not vegetables.:rolleyes:

Would you peel them first?

I would peel them by the “hot water dip” method, and also remove the green fibrous veins from the end.
 
I would disagree about citrus fruits. Not sure I would eat lemon or lime, but I regularly eat the peel from oranges and the smaller orange coloured ones (satsuma, clementine, tangerine etc.).

I have seen people eat orange peels. There was a schoolgirl on the bus decades back who would bite into a orange like an apple and chew away.
