but think part of me was secretly hoping you would all be telling me to get a new bike! Quite fancy getting a big frame, maybe an older one, and building it up.

Someone should have recommended that by now, it's the best answer to any bike related question, N+1

Got one of these, thanks for the heads up. It really does seem to make a big difference, just experimenting with the angle now to get it right, Started off at max to see if there was a difference but it effectivley made the stem quite a bit shorter so a bit twitchy, am gradually droping the angle now so see where the sweet spot is.
