The original potatoes were highly toxic and the people from the areas the wild tubers grew bred them to get the safe potatoes we eat now. Despite that their descendants around now in some areas still eat tubers from plants close to the wild original plants showing how their ancestors made them safe.

It involves taking them high up into the mountains where the winter cold helps break down the toxins. Interesting process and inventive. It's like the way hunter gatherers in the prehistoric British Isles are believed to process foods to remove toxins by heating and steeping processes, like acorns. How did they work out how to make toxic things edible through such convoluted processes?
