Alex James No.1 cheddar is nice but a bit pricey (if you can find it). I got mine from the Cheese Hamlet in Didsbury of all places.

OTOH, it will have a pretty punchy flavour I can imagine, so you won't need over much to get the full effect. Which, like with Parmigiano, will make it rather economical.
