Pulp Fiction (proves John Travolta is a good actor. Also very funny in places)
Local Hero (Gentle humour)
The Man Who Sued God (Judy Davis is epic in this)
Life of Brian (Funniest film ever made)

If we're covering all the bases genre wise I should mention a few Sci-Fi films.
' Demolition Man' with Sly Stallone, Sandra Bullock and Wesley Snipes is very entertaining.
'The day the Earth Stood Still' with Michael Rennie is still worth a watch today.
'RoboCop' is a masterpiece and doesn't look like it was made in 1983.
Much newer is 'District 9' a South African film which I'm sure will reach classic status.
'Dune' is a classic but you'll have be a bit dedicated to sit through 3hrs of it.

3 of my favourites:
(1) "The Man". Samuel L Jackson in a rare comedy role. Snort out loud funny situation comedy police drama.
(2) "The Man Who Knew Too Little". Bill Murray at his very best. A real-life adventure that he has reason to think is all a birthday role play game. Hilarity ensues.
(3) "Fargo". Frances McDormand's break-through film. Quirky and brilliant. Darkly comedic drama. Great performance from a squirming William H Macy too.
