I am replacing my Shimano deore XT m8100 derailleur and replacing the chain the one I have bought is a Shimano m6100 will this be ok to use it's a 12 speed cassette

Yes, that will work fine. The M6100 derailleur is fully compatible with your 12-speed setup. Just be sure to adjust the limit screws and indexing when you install it.
