Grilled Salmon on a bed of fried rice

Roast swan (a slowly matured pen, 22 months old) glazed with otter milk and African killer bee venom. For the stuffing I went for turtle dove lung and wild bulrush root. Veg, all seasonal and topped off with au jus made from the swans feet and beak.
